Shiitake (Lentinula edodes) is a versatile mushroom with a firm texture and umami or savory flavor. Loaded with nutrition, shiitake is up to 20% protein and contains niacin, thiamine, and riboflavin. This all-weather strain fruits at a broad temperature range and is great for all-season production. This strain produces best in the early spring and fall when humidity levels are higher. Shiitake is highly prized in many culinary recipes, and when sautéed can be used as an addition to almost any meal. Fruiting temperatures 50-70ºF.
